For the locals of Jiaxing, East China's Zhejiang province, eight-treasure duck, known as babao ya in Chinese, is a beloved delicacy symbolizing reunion.
It is a staple at important banquets, particularly at family gatherings during Spring Festival.
The primary ingredient of the dish is a two-year-old duck, complemented by a selection of ingredients including duck gizzards, abalones, chestnuts, lotus seeds, mushrooms, winter bamboo shoots, sea cucumbers, and glutinous rice.
The preparation process begins by completely deboning the duck. Subsequently, all ingredients are diced, mixed, prepared, seasoned, stuffed into the duck, and sealed. The duck is then stewed in a casserole for approximately two hours.
Featuring crispy skin, succulent meat, and an enticing aroma, the eight-treasure duck is the perfect addition to any family gathering during Spring Festival. The dish not only delights the palate but also conveys people's heartfelt wishes for a joyous and prosperous life.
