Fermented bean curd, or furu, is a traditional Chinese condiment consisting of a form of processed preserved tofu. The ingredients typically are soybeans, salt, rice wine, and sesame oil or vinegar.

It is usually commercially packaged and sold in jars containing blocks spanning 2 to 4 cm in length and 1 to 2 cm in thickness that are soaked in brine with select flavorings.

Shigang town in Nantong boasts a history of more than 1,000 years and has been a hub of flavoring production since the Ming (1368-1644) and Qing (1644-1911) dynasties.

Many locals are engaged in the business of producing fermented bean curd, as well as pickled and sauced food using traditional techniques.
