Tonglu residents preserve tradition of noodle making

Residents from Xinhe township, Tonglu county, East China's Zhejiang province have recently been busy making suomian, a kind of handmade dried noodles with a history of 1,000 years.
Currently, more than 1,000 people from 300 households in the township are engaged in the making of suomian.
The noodles have gained popularity among locals due to its soft, elastic texture which is made possible by the complicated six-step preparation process.
Efforts have also been made by local authorities to allow more people to try the delicacy.
The local government has taken a series of measures including registering the trademark of Xinhe Suomian and unveiling a brand logo to boost the development of the noodle industry.
A store exclusively selling this brand of noodles has been opened in the downtown area of Tonglu.
