Lardy cakes with scallion pieces are the most memorable food for elderly Suzhou residents. These cakes are white, soft, moist and oily, but not greasy. In the past, during harsh times, deep-fried dough sticks and bannock with lardy cakes made a nutritious breakfast.

Tips: Lardy cakes can be eaten directly or cut into small pieces and cooked with pumpkin.

Suzhou-style diamond cake

Suzhou-style diamond cakes were introduced in the documentary A Bite of China, Season II. Diamond cakes come in two sizes: big and small. Both of them are square shaped, with sweet or salty fillings. Fillings vary from mint, rose, red bean paste, pumpkin and fresh meat. The fillings can be seen through the skin of the cake.

Tips: The cakes are white, with thin skin and abundant fillings. They taste better after steaming.
