Preserved radish sprouts are commonly seen on the dining tables of Hai'an natives during winter.

In fact, most families in Hai'an would make several jars of preserved radish sprouts this time of the year.

To make preserved radish sprouts, one need wash the radish sprouts first, put them into boiling water till they are medium well-done, bring them to the prepared jar and press them tightly together, and finally put a large stone over the compressed radish sprouts and seal the jar.

The jar must be kept warm, or else, it would be a failure to make preserved radish sprouts. After several days, the green radish sprouts will turn into preserved yellow radish sprouts and emit a unique aroma.

The simplest way to enjoy this delicacy is to sprinkle some chopped green onions and sesame oil over chopped preserved radish sprouts.

Hai'an natives have created various dishes made with preserved radish sprouts. They include preserved radish sprouts porridge and handmade noodles with preserved radish sprouts.
