In Qidong, the Winter Solstice is not complete without a plate of freshly landed hairtail fish. As the season arrives, hairtail from Lyusi Fishing Port becomes a prized delicacy on local dining tables.

The waters around Lyusi are known for their clarity and abundant natural feed, allowing hairtail to grow at a more natural pace. This environment gives the fish a fine yet firm texture. Around the Winter Solstice, falling water temperatures prompt hairtail to store energy for the winter, bringing their fat content to its peak. Unlike many fish, this fat is not concentrated in the belly but is evenly distributed through the muscle fibers, creating a rich yet balanced taste.

According to testing reports, Lyusi hairtail contains nearly 20 percent more umami amino acids than ordinary hairtail, contributing to its distinctive freshness and depth of flavor.

Versatile in the kitchen, Lyusi hairtail is equally delicious pan-fried, steamed, braised or deep-fried, making it a seasonal favorite that defines wintertime dining in Qidong.
