The Pingluo Hyacinth Bean Jelly is one of the favorite tourism snacks in Shizuishan, Ningxia Hui autonomous region, which is made from premium small hyacinth beans harvested along the Yellow River. The finished jelly is crystal clear, smooth, and firm without falling apart.

The soil and water along the Yellow River in Pingluo county in Shizuishan are particularly suitable for the growth of hyacinth beans. In the past, people there skillfully used locally grown beans that were drought- and alkali- resistant to develop an ancient method of handmade bean jelly.

After the process of grinding beans into powder, simmering that over a low heat, and allowing it to solidify, the jelly is infused with the fragrance of hyacinth beans.

The bean jelly is paired with secret sour and spicy sauce, which blends the richness of Pingluo vinegar, the spiciness of pepper chili oil, and the freshness of garlic paste, tastes sour and spicy yet it is appetizing, refreshing and helps to relieve greasiness.
