Fuzhou fish balls, a traditional and beloved snack from Fuzhou, capital of East China's Fujian province, are more than just delicacies; they are also known as "balls of blessings". They represent the essence of Fujian cuisine, Fu culture (culture of blessing), and Maritime Fuzhou, embodying the spirit of innovation, unity, friendliness, and openness of the locals.

Fuzhou fish balls, which are popular on Fuzhou dining tables and by tourists, are crafted from finely chopped eels, sharks, mackerels, or freshwater fish mixed with sweet potato starch and filled with lean pork or shrimp, capturing the rich flavors of the sea and the warmth artisanal craftsmanship.

Served in a bowl with bone broth and sprinkled with salt and spring onions, Fuzhou fish balls have an inviting aroma. They deliver a balanced seafood essence without an overpowering fishy taste.

In 2012, the China Fisheries Association designated Fuzhou as China's "Fish Ball City".

Today, Fuzhou fish balls have found their way around the world, reaching markets in the United States, Canada, Spain, and beyond. With annual sales of over 3 billion fish balls, Fuzhou dominates the fish ball market, showcasing its culinary prowess worldwide.

In 2022, the Fuzhou Fish Ball Museum, along with its affiliated Shanghai, New York, and Philadelphia exhibition halls, opened its doors to provide a cultural gateway for overseas Chinese and international friends to explore the tradition of Fuzhou fish balls. These delicacies not only reflect Fuzhou's culinary heritage but also carry blessings as they cross borders and delight palates globally.
