Nantong's Donggao Meng Family crab roe buns recently won over numerous fans at the 2024 China Brand Expo, which was held in Shanghai from May 10 to 14.

As an intangible cultural heritage item in Nantong, Donggao Meng Family crab roe buns boast a history of more than 100 years and are a culinary trademark of Rugao.

The buns feature fluffy fermented wrappers, and each bite is full of delicious crab roes.

"The Donggao Meng Family crab roe buns require 20 unique steps to make," said Meng Yufang, fourth-generation maker of the buns, at the booth. "To get the best softness and luster, we usually ferment the dough for more than 12 hours."

In addition to using sourdough starters and handcrafting, Meng has introduced Xinghua-produced crabs, the best in China, to Rugao and even farmed them herself.
