Meat from black pigs fed with natural corn, root of kudzuvine, and sweet potatoes is cured with Tujia techniques, and then mixed with rhizoma kaempferiae, anise, cloves, Sichuan pepper and cooking wine. The tender, golden, nutritious pork is favored by consumers inside and outside Sichuan Province.
Zhu Zhaolan, a master of Bashan preserved pork, is currently a representative inheritor of this municipal intangible cultural heritage.
