Baijiao Sea Bass explores market in Chengdu

The Chengdu session of the nationwide Baijiao Sea Bass promotion invited chefs, purchasers, and representatives of catering associations in Chengdu, Sichuan Province, to get more familiar with the fish on Dec 19.

The event received guidance from Guangdong Province's Department of Agriculture and Rural Affairs, and was hosted by Doumen District's People's Government.

Strategic cooperation agreements between Doumen Eco-Agriculture Park's administrative committee and Chengdu parties such as the Chengdu Food Industry Association, Sichuan Province Hot Pot Association, and Chengdu Laofangzi were signed to jointly formulate a supply and trade chain for Baijiao Sea Bass and to promote the R&D and market promotion of prefabricated bass food products.

The operating revenue of Chengdu's catering industry surpassed Beijing and Shanghai to be the nation's second in 2019, only after Guangzhou.

Xiong Jianghua, CEO of Chengdu Laofangzi, one of the top 10 restaurants in Chengdu, said that rivers flowing through the city have brought the fish-eating culture to local residents and Baijiao Sea Bass is quite rare to them compared to local fish.

Xiong added that the Baijiao Sea Bass is worth recommending and will have board market in Chengdu.

Zhang Xiang, a famous Sichuan cuisine chef, put forward that Baijiao Sea Bass tastes not only tight and crisp, but also tender and sweet. The fish can be cooked with other ingredients and create innovative dishes.
