The shrimp meat of the dish is freshly peeled, then seasoned and stir-fried with lard oil. According to legend, Emperor Qianlong (1736-1795, an emperor of the Qing Dynasty) recalled the tasty shrimp meat in Lan Hu Shan Si (mashed shredded eel), and then sent people in search of its origins and availability. Huzhou offered Qing Chao Xia Ren (stir-fried shrimp meat) to the emperor and won his praise.

The dish, Lao Fa Xia Ren, was included in the first list of Zhejiang's famous dishes in 1956.
