Qiang(炝)is a special cooking method which boils food briefly then dresses it with soy, or stir-fries then cooks it with sauce and water. The dish, Qiang Bai Xia, with white shrimps as the main ingredient, is a raw food aquatic dish. The shrimps are still alive when served. The dish is top of the traditional cold dishes in Huzhou.
