Deqing da huoshao is a fried wheaten cake from Huzhou's Deqing county.

The cake, which is bigger and thicker than Shaobing, or Chinese style baked roll, is usually stuffed with minced pork, diced beans and chopped scallions.

According to Fei Xinglong, who started learning how to make the cake when he was 19, Deqing da huoshao used to be something not many people could afford. In the past, people would purchase only one piece during the Spring Festival and share it with family members, Fei recalled.

Despite the wide variety of cakes available today, Deqing da huoshao is still one of the favorite snacks among locals and visitors alike. Some people who have moved out of Deqing would even travel back to the county just to savor this delicacy.

The cake is best eaten when it's hot as the flavor will change when it gets cold, according to Fei.
